Beets are a root vegetable full of beneficial vitamins, minerals and phytochemicals, not only in the root, but also in the greens. I love making borscht or beet soup and my favourite when I have guests over is to serve roasted beets with a mixture of root vegetables like onions, carrots and potatoes and of course my special spices. I also eat beets boiled, pickled (I could eat the whole jar), and you can even have raw beets in the form of salad, no cooking required and no staining your hands red. When I go to the mall I go to Jugo Juice and get the Max Veg blend with carrots and beets (sans ginger – my personal choice). Beets help improve the energy levels; as well, it is an excellent source of iron. Beets help safeguard against cancerous growth while strengthening the immune system.

Drink beets, eat beets. Below is one of my favourite recipes for BEET SOUP:
- 8 cups water or beef broth
- 2 tbsp of coconut oil
- 1 large onion, peeled, quartered
- 4 large beets, peeled, diced (boil them clean and whole in the water or broth first to make the beets easier to peel, wear gloves to not stain your hands when peeling, KEEP broth aside, boil for at least 30 minutes)
- 4 organic carrots, peeled, diced
- 1 large russet potato or yam, peeled, cubed
- 2 cups thinly sliced cabbage
- 3/4 cup chopped fresh dill
- 2 tbsp red wine vinegar
- 1 cup sour cream (option)
- Salt and pepper to taste
1 In a large pan add coconut oil and saute the onions, carrots, and potato or yam until tender.
2 Add sauted vegetables and raw cabbage in with the beet broth that was set aside and bring to boil. Reduce heat, cover, and simmer for about 20 minutes.
3 Add 1/2 cup dill; and season to taste with salt and pepper. Stir in vinegar.
Ladle soup into bowls. Top with sour cream and use the remaining 1/4 cup dill for garnishing.
