Rina’s Insalata Caprese (for one)

After the gym there’s nothing more tasty than this salad.

What you will need:

1 roma tomato
1 mozzarella or boccoccini ball
2 leaves of lettuce
2 tbs extra virgin olive oil
1 tbs balsamic vinaigrette
½ tsp brown sugar
½ tsp oregano
Salt and pepper
4 Manzinilla olives
Fresh basil

Mix the extra virgin olive oil, vinaigrette, brown sugar, oregano and salt and pepper (to taste) in a little container, shake and let sit.

Cut the tomato in slices and spread across plate and do the same with the mozzarella (or boccoccini) ball and basil leaves laying them on top of each other alternating each creating an overlapping effect.

Next, cut up lettuce and put it around the cheese, tomato and basil. Garnish the salad with about 4 Manzinilla olives, onions and capers to your liking and then drizzle the dressing all over and enjoy with a baguette (and nice glass of wine).

Note: Don’t cheap out on the olive oil, olives or the cheese. You may purchase the Boccoccini in a container or my favorite is at the the farmer’s Market (before it closes down) or of course at Janice Beaton’s Fine Cheese. You may useo use the mini boccoccini balls if you prefer.
